2 large tomatoes, chopped
1/2 a large yellow chippolini (or regular white), peeled and minced
1/4 tsp minced garlic (or to taste, we like a 1/2 tsp!)
1 habanero or jalapeño pepper, stemmed, seeded and minced
1/4 cup chopped cilantro leaves
1 tablespoon fresh lime juice (can substitute with vinegar or lemon juice)
Salt and fresh pepper to taste
Good with tacos, burritos, or just chips.
- Combine all ingredients, taste and adjust seasoning as necessary.
- Let the flavors mix for 15 minutes or so before serving, but serve within a couple of hours.
