Caprese Mix (Untraditional)

Ingredients: 
1 pound of fresh heirloom tomatoes, diced (about 1/2 in. cubes)
1 pound of fresh mozzarella
1 pound of green/yellow wax beans, lightly cooked and cut into bite-sized pieces
1/2 cup of slivered basil
1/4 cup of olive oil
3 - 4 tbsp red wine vinegar
salt and pepper to taste
Directions: 

Blanch wax beans in boiling water for about 2-3 minutes, so they are still fresh and crisp.

Chop mozzarella, tomatoes, and beans (beans can be chopped in half or thirds).

Mix and season and then re-season again to adjust to your taste. Eat at once or keep in the fridge up to a few days.
