Apple and Gorgonzola Salad with Maple Dressing
2 large apples (any variety as preferred)
8 cups mixed heirloom lettuce (about 6 heads)
1/4 cup maple syrup
2 tbsp extra virgin olive oil
2 tbsp lime (or lemon) juice
1/4 tsp salt
1/4 tsp freshly ground black pepper
1/4 cup crumbled Gorgonzola cheese
2 tbsp chopped pecans or walnuts (optional)
Combine maple syrup, olive oil, salt, pepper, and lime (or lemon) juice.
Combine greens and apples in a large bowl. Drizzle with dressing; toss gently to coat. Sprinkle salad with Gorgonzola cheese and pecans.
