Braising Mix

Coke Farm packs a blend of greens known collectively as Braising Mix. This is a unique blend of organically grown chards, kales, beet greens, chicories, and specialty greens. These are "teenage" sized greens that are delicious sauteed with garlic in olive oil. Braising mix is available year round.

Meyer Lemons

Meyer lemons were "discovered" in China in the early 1900's. This smooth skinned citrus is believed to be a cross between lemon and mandarin orange. Not quite as tart as regular lemons, Meyer lemons are slightly rounder, with a thinner, shiny rind and slightly darker yellow pulp. This juicy lemon is generally available from November until April. Meyer lemons can be used to great effect in desserts, like a lemon souffle, where a mild, sweet perfumed scent of lemon is desired.

Radishes

Watermelon Radish: This is a beautiful, ball shaped radish of Chinese origin. It has green shoulders on white skin, with rose colored flesh. It is crisp and mildly flavored, delicious sliced thin in salads, used as a garnish, or cooked. It grows 3-4 inches in diameter. The larger the radish, generally, the milder the flavor.

Black Radish: Another large radish, though more pungent in flavor than the watermelon radish. It is as striking in appearance, with a black skin and white flesh. It can be used as a garnish, grated raw into salads, or peeled and cooked like turnips. Black radishes were used for medicinal purposes in ancient Egypt, and are still considered to have healthful properties.

Shallots

Shallots are related to onions, with a flavor that is a cross between a sweet onion and garlic. Smaller than regular onions, with tapered ends and papery reddish-brown skins, Coke Farm grows a variety that is slightly larger than is normally available commercially, a plus for cooks who love to use this delicious allium. It is generally available from late summer through late winter.

Sunchokes

Sunchokes, also known as Jerusalem artichokes, are related to the sunflower, and like them, require a sunny climate and produce a beautiful flower. The tuber is the edible portion and has the apprearance of a very knobby potato. This starch-free vegetable can be eaten raw in salads, roasted or baked like potatoes, or creamed in soups. It is generally available from fall to spring.
